If you were to ask me what my favorite candy is … it’s probably Chocolate Covered Caramels (with pecans or walnuts!). Soft or hard caramel, it doesn’t matter! They’re all delicious to me.
Usually when I have that craving, I tend to grab Sugar Free Russel Stover Pecan Clusters. The problem is these are sweetened with Maltitol and Stevia, which is a no-go for me (because of Maltitol). But sometimes I like to live dangerously, haha.
I’d pop a couple of these in my mouth, love it for a second.. and then regret it the whole day. Y’all know what I mean!

For the chocolate part, I used ChocZero Almonds Keto Bark and melted it down in a makeshift double boiler. You can use any chocolate you like, but I prefer their chocolate. Also, you can just use their regular squares too if you’d like.
For this recipe I also use Lakanto Monk Fruit Sweetener, which is my favorite Keto sweetener. It uses Monk Fruit and Erythritol. You can either use the Powdered or Granular – whichever you prefer.

Keto & Low Carb Sugar Free Pecan Toffee Brittle Caramel Squares

Description
Hard Caramel with delicious Pecans & Chocolate makes for a great Keto treat! With only 1 Net Carb per serving, you can fit this into your Keto Diet when you have a craving for something sweet!
Ingredients
- 12 Individual Pieces of Choczero Chocolate (your choice)
- 1/2 Cup of ChocZero Syrup (Caramel works best, but Maple is good too)
- 1/4 Cup Butter (Unsalted)
- 4 tbsp of Lakanto Monk Fruit Sweetener (Powdered or Granular)
- 2 oz of Chopped Pecans
Instructions
- Using a double boiler, melt your chocolate on low.
- Add half of the chopped pecans in the silicone molds.
- For the next part, we’re going to use but modify the instructions for Hard Keto Caramels / Keto Candy. Please refer to my Keto Caramels & Keto Candy Recipe.
- On a separate pan, melt the butter. You can brown the butter if you’d like, but that’s optional (I like it though!).
- Once the butter is melted, turn the heat to medium-low and add ChocZero syrup & Lakanto and whisk frequently.
- Get it past the boiling point and when it starts frothing, whisk for 30 seconds – 1 minute. DO NOT let it form giant bubbles! Instead, once it starts creating 1 inch bubbles, remove from heat and whisk for another 20 seconds.
- Pour into silicone mold over the chopped pecans. Fill halfway. Work fast! The top part will harden and it should give you some time to work on the melted chocolate.
- Stir the chocolate and make sure it’s completely melted.
- Let it cool for 1-2 minutes before adding it on top of the caramel.
- Pour the chocolate on top of the caramel and add the pecans on top.
- Let it cool to room temp completely before wrapping.
